Masu salmon (scientific name oncorhynchus masou) is a species of salmon that lives in the waters surrounding Korea, Taiwan, and Japan. Here in Cooking Mama, the salmon is cooked via salt-broiling, a popular method of cooking in Japan (also known as shio-yaki). Any kind of meat can be used, but fish are more common and suited for this method, in which salt is coated around the fish before it is cooked. Besides adding flavor, the salt helps firm up the flesh and ensures a crispy, brown skin.

  1. Clean the masu salmon!
  2. Skewer it!
  3. Rub in the salt!
  4. Stick skewers in the fire!
  5. Cook it in the hearth!
